Whenever I think of brownies, I imagine my granny’s small kitchen, where I could always smell something wonderful baking. She wasn’t a professional baker, but everything she cooked reminded me of being hugged. Her brownies? Legendary. Just how we liked them: fudgy, chocolatey, and a little unmatured in the middle every time.

Surprisingly, this isn’t the full story. When I started eating low carb a few years back, those brownies reminded me of sweeter times… until today.

I created this keto brownie recipe due to missing the comfort of Granny’s home, and because I had to create it with low carbs. Remembering how good my granny’s keto brownies were, I wanted to continue with healthy eating. So, I got to work, pulled out the skills she taught me, and began with some experiments.

Predictably, batch after batch, I kept testing for better results such as utilizing less sugar, a richer chocolate and a better flour. I decided to create this almond flour brownie recipe. Then I came with this low carb, sugar free brownie mix which is chocolatey, very fudgy and perfectly suited to a low-carb or keto diet.

Ingredients

You can use different ingredients for this brownie recipe and make a few adjustments to it according to your taste and diet preferences. 

Wet Ingredients

  • 1/2 cup (113g) unsalted butter (or coconut oil for dairy-free)
  • 3 oz (85g) unsweetened dark chocolate (70 %+ cocoa, no sugar added)
  • large eggs (room temperature)
  • 1 tsp vanilla extract

Dry Ingredients

  • 3/4 cup (75g) blanched almond flour (super-fine texture)
  • 1/3 cup (30g) unsweetened cocoa powder (or raw cacao powder)
  • 2/3 cup (100g) powdered erythritol or allulose
  • 1/2 tsp baking powder
  • 1/4 tsp fine sea salt

Optional Add-Ins

  • 1/3 cup sugar-free chocolate chips
  • 1/4 cup chopped walnuts or pecans
  • 1 tsp espresso powder (optional, enhances chocolate)

The classic fudgy texture of this low carb brownie comes from almond flour, unless you can’t find it.

Directions for the best Homemade Keto Brownies 

1. Prepare Your Pan Before the Food

It’s time to put your oven on 350°F (175°C). Cover the bottom and two sides of an 8×8-inch pan with parchment paper, so that you can lift the baked brownies more easily.

2. Chop the Chocolate and the Fat to melt them.

Put 4 oz chopped unsweetened dark chocolate and 1/3 cup coconut oil or butter in a bowl that can stand high temperatures. Melt the ingredients together on the stovetop or in the microwave in brief periods and stir again after each round, until you have a smooth glossy mixture. Take out of the oven and let it cool for a moment, then mix in 1 teaspoon vanilla extract.

3. Add all of the dry ingredients into one pot.

In a large mixing bowl, mix your ingredients by either sifting or whisking a cup of superfine blanched almond flour, ½ cup unsweetened cocoa powder, ½ cup powdered erythritol (or Besti allulose blend), ½ teaspoon baking powder and ¼ teaspoon sea salt. When you sift, you remove hard lumps and end up with a smooth mixture.

4. Mix wet and dry ingredients, then combine

Pour the thin chocolate onto the dry ingredients in the bowl. Mix just enough with a spatula or whisk until everything is mixed. The mixture will be very thick and rich.

5. Add Eggs

Add room-temperature large egg, one at a time, mixing the dough up well after each egg is added. It adds a lovely, creamy feel to the cupcakes. Don’t mix your batter for too long.

6. Include Optional Additions

If you’d prefer, mix in 1/3 cup of sugar-free chocolate chips or chopped pecans or walnuts at this stage.

7. Bake

Fill the batter into the baking pan so it is spread evenly. Leave the muffins in the oven for 18 to 22 minutes, until you use a toothpick and find a bit of moist crumb in the cupcake. The brownie mix should be slightly softer than you expect — it creates fudgier brownies.
